Today I found this recipe on Mel's Kitchen Cafe while standing in the baking aisle in the grocery store. I wanted some chocolate cheesecake and didn't want to deal with baking it. Also, I divided the recipe in thirds so that I could not have a ton of cheesecake for myself.
1 package (8 ounces each) cream cheese, softened to room temperature
1/2 cup powdered sugar
1 dollop of sour cream
1/3 teaspoon vanilla extract
4 ounces bittersweet chocolate, melted and cooled to room temperature
1 package mini graham cracker crusts
Mix the cream cheese until smooth and creamy, 1-2 minutes. Add the powdered sugar and beat again for a minute or so until combined. Add the sour cream and vanilla and mix. Add the melted chocolate and whip for 2-3 minutes, until the mixture is extremely light and fluffy. I divided the filling into equal amounts, put them in their individual shells and then smoothed the top. Cover with plastic wrap and refrigerate for 3-4 hours until chilled and set.
