2 8 oz blocks cream cheese
2 cans Baja corn (with the peppers)
1/4 cup sour cream
16 oz pepper jack cheese
Tajin seasoning
Take all those ingredients, dump 'em in a pan, and cook for 15 minutes at 350˚.
Give it a good stir.
Half a bunch of chopped Cilantro
Half a bunch of green onions
Cotija (cheese) as topping
Stir in the greens, top with crumbled cotija, add another layer of tajin and cook for another 15 minutes or until brown on top.
Serve with tortilla chips.
