Zucchini Bread

My mom makes this recipe frequently, but she uses 3 loaf pans. I only have one loaf pan, so I went Bundt.

3 eggs

1 cup vegetable oil

2 1/2 cups sugar

2 cups grated zucchini

1 tsp salt

1/4 tsp baking powder

1 tsp baking soda

3 tbsp cinnamon

3 cups flour

1/2 cup chopped nuts (optional)

Preheat oven to 325˚. Beat eggs, then add oil and mix. Add sugar and mix, then zucchini. Mix together seasonings and flour, add and mix. Then add nuts. Bake in 3 greased and floured loaf pans for 50 minutes. It's important to check it with a toothpick. It looks wonderful and done, but can fall and be gooey inside (sigh, true story). Or a bundt pan for 50-60 minutes. Enjoy by itself, with butter or dust with powdered sugar.

This recipe has so much cinnamon, that's what gives it the brown color.
