Sweet Potato Nachos

I wanted to make something yummy and saw this video for Tex Mex Stuffed Smashed Sweet Potatoes. And I saw this recipe for Slow Cooker Organic Chicken Taco Bowls.


I ended up making something similar but different.


1.5 cooked sweet potatoes

1 1⁄3 tbsp. chili powder

1 tsp. ground cumin

1⁄2 tsp. paprika

1 tsp. salt

3⁄4 tsp. pepper

garlic olive oil

1 can (15 oz.) black beans, drained and rinsed

1⁄2 cup corn

shredded cheddar

ground beef


oil the bottom of a glass pan

preheat to 375

put sweet potatoes in the bottom of a pan (smoothed out). sprinkle seasonings on top. Bake for 10 minutes.

Add layer of beans and meat (only on half, obvs), then add corn and cheese.

Bake another 10 minutes.

Serve on top of a few tortilla chips (with sour cream) to add some crunch.
