My boss made these for our Christmas party. I'm obsessed with rice crispy treats, but today I may have a new favorite thing. That's saying a lot.
5 tablespoons butter or margarine
1 cup chocolate chips*
1/4 cup light corn syrup
1 bag miniature marshmallows (reserve a cup)
1 teaspoon vanilla
8 cups Golden Grahams cereal
Butter 9x9 pan (or 13x9, whatever works for you!) I like to make my treats on the stove. Start by adding butter to a non-stick pan on medium heat. Once the butter is melted, add the corn syrup and chocolate. Once that is melted, add the 5 cups of miniature marshmallows. Stir until smooth. Add vanilla, stir until smooth. Turn off heat and remove pan from stove. Add half the cereal. Mix, then add the second half and the extra cup of marshmallows.
Press mixture evenly in pan, using buttered back of spoon. Let stand uncovered at least 1 hour, or refrigerate if you prefer a firmer bar. Store loosely covered at room temperature up to 2 days.
*the recipe calls for 1 1/2 cups of chocolate chips, but it really doesn't need that much. I used 1/2 cup and it was still amazing.
