Protein Balls

Last weekend I was able to hang out with my cousin's wife and she gave me a sample of this energizing treat. Typically when I hear the term, "protein balls" or "flax seed" I immediately think, "well that sounds disgusting." But since I was able to try these, I was sold. I mean, not on the flax seed - let's not be ridiculous. They take about 2 minutes to make and will last approximately one week. I had some leftover regular sized M&Ms from Easter, so I used those. If you come up with a better name for them, let me know.

1 cup quick oats 1/4 cup honey 1 cup peanut butter 1 tbsp vanilla 3/4 cup mini m&m's or chocolate chips

Mix it all up, get your hands moist with water and roll into balls. (I used my cookie scoop and that worked well to make consistently sized treats.) Place balls on cookie sheet lined with wax paper. After all balls are rolled place in fridge for 30 minutes to set then place in ziplock bag. You can freeze these if you don't think you can eat them all in one week. They usually last a week before drying out if you refrigerate them.
