Strawberry Margarita Ice Pops

These are a delicious summertime treat.

1 cup freshly squeezed lime juice (6-8 limes)

1/2 cup water

1/2 cup triple sec*

1/4 cup tequila*

1/2 cup superfine sugar

1 pint strawberries, quartered

Special equipment

blender and ice pop molds

*If you are not using alcohol, add another 1/2 cup water and 1/4 cup fresh lime juice

Reserve 8 strawberry quarters. Skewer popsicle sticks with them. This helps the popsicle adhere to the stick. In a blender add everything but the strawberries; blend until the sugar has dissolved. Add strawberries, and blend until pureed. Pour margarita into the ice pop molds, insert skewered sticks and freeze at least 4 hours or overnight.

Makes 8.
